TEMPTATION TUESDAY ON WEDNESDAY.... AGAIN!

Hey everyone, this is becoming a really bad habit for me.  Sorry, again!!!!! Hope that you all can forgive me once more.  As usual I have a list of excuses that goes on for miles so, I won't bore you to death with them.  I will just get on to my blogging.  I did however, want to leave you with a sweet taste in your mouth.... yeah, that's right.  Today's recipe is a definite no-no for those of you who are dieting or watching your weight.  But it is a huge YUMMY for the rest of you.  I got this recipe from a co-worker at one of my previous jobs years ago.  I hope that you like it too!!

PUMPKIN WHOOPIE PIES

2 c brown sugar
1c oil
2 eggs
1 tsp vanilla
1 (15oz) can pumpkin
3 c flour
1 tsp ginger
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon

*I also add choc chips into mine.  Just a cup or so will do good!  Or, you could roll the pies in chocolate chips when you are finished assembling them.  Either way they are delicious.

Mix sugar, oil, eggs, vanilla and pumpkin.  In a separate bowl, combine all dry ingredients; gradually add dry ingredients into creamed mixture and mix well.  This is where you would add you choc chips and stir them in with a spoon.  Drop by tablespoon onto ungreased pan.  Bake at 350 for approx. 14 mins.  When you take them out put them onto a cooling rack.

FILLING;

2 c confectioners sugar
1 8oz pkg cream cheese
1 c shortening --I use less about 1/2 c to 3/4 c
1/2 tub of fluff
1 tsp salt
1 tsp vanilla

Mix well.  Take one pie and spread filling over it and top with another pie.  These are so yummy good, you won't be able to eat just one.  These are also delicious put in the freezer.  I am not sure how long they will freeze for...... they never lasted that long in my freezer. LOL!

NEW CARPET PHOTOS

Hello friends.  I trust that you are all having a nice fall day.  It is a bit on the chilly side here but, I am loving it.  The cooler air feels so nice to me.  The leaves are all changing color so beautifully.  Love fall!!!!!   It just feels like this is the way it is supposed to be. 

Okay, so I promised more pictures of the new carpeting right?!  Are you sure that you are ready for this?  Holy cow, this has been such a long time coming.  I absolutely love my new flooring.  Hubby says that I better, he doesn't plan on doing this again any time soon! LOL!  He doesn't have to worry, I am so happy with it.  Well, are you ready?
Alright, so the photo above shows the tile squares (we had forgotten about) that were under the carpet in the living room, that we pulled up and took out.  Lovely, huh?!  I shouldn't say anything bad, you know because they served the purpose for a great many years.  I was just very fortunate that this year we could make the change. 
Another before shot of the living room.  Of course my dogs are feeling quite photogenic in all of these.  Kayzer is in the living room here and Miss Frankie is coming in to see what's going on.

Pretty huh?  If you look closely you can see 4 different types of flooring here.  The new barn wood under Jeffrey, the brown square tiles also under Jeffrey, the plywood (painted white-yuck), and the bluish-grey tiles under Miss Frankie.  This was mostly covered up by a braided blue rug.  So, yes at one time there was over 5 different flooring's going on in here.  Unfortunately this happens to be the first room that you walked into.  Again, I made do with what I had and I am very thankful for what I have had for all these years.  I am also very grateful for the opportunity to improve on this too.

 
So, this picture gives you a pretty nice look at it.  I know!  Yes, our walls are next years project to finish up.  I call it my fifty-fifty room.  It is half done and half waiting.  I know that it doesn't look so pretty here but, stay with me.  You will be amazed at what a little flooring can do.

This is the living room after the installers left and I had vacuumed.  Oh my gosh.  I had to get down on the floor and lay on it.  It feels amazing.  The color of it goes so well with the stones around the fireplace.  Guess what?  I didn't pick this color for in the living room.  When we had Home Depot come out to measure up the rooms, they called us and told us they had a promotion going on and if we did both rooms with the same carpet it would save us over $500.00.  Well, I don't know about you but, that's alot of money for us.  I debated over it though.  I had originally wanted a mustardy color for out here.  I finally gave in on it though to save the money and be able to afford to get both carpets laid this fall versus getting just the front room laid now and getting the living room carpet laid in the spring/summer.  Thank God for this opportunity, I never would have gotten to see just how great this looks.  Sometimes if we just give a little the end result is so much bigger than what we actually anticipated. 
Yeah, you guessed it!  They LOVE it too!!  And, they wanted their pictures taken again. 
This is the living room all put back together.  Phew!!  That was one heck of a job!  You all wonder where I have been.......yeah!!! 
This is my television stand.  It was an old chest like box that I got for $35.00 at a junk store.  One of my sisters in law found it and had no room for it so, she called and told me about it.  I knew that if she loved it, that I would too!  Sure enough, I do!  Hubby put shelves in it for me and it has been the best entertainment center we have ever had, (the cheapest too)!!!!

This is looking out from my living room into the dining room, and if you look closely you can see a peek into the front room as well.  Oops, and don't forget Kayzer looking back at you! LOL!
Alright so about a month ago I showed you the pictures where the house joins in the middle and the split that got worse as the seasons change, right?  Well, the split is now covered by the rug.  That is why it is L shaped.  We would have just run the barn wood flooring straight through but, we needed to cover the split all the way across with carpet so it would have some give, and wouldn't split.  I am very happy with the way it came out though.  Took the photo before hubby finished placing the last transition strip down.  If you look closely you can even see Jeffrey!  I lose him in the carpeting now!  Too funny!


Same idea in this photo.  I just wanted to show the L shape, and that you can make it work however you have to.  I don't know why my picture went over to the left, but it did.


Better than the five different flooring's, don't ya think?!  I love it.  Totally and completely happy.  Don't let hubby know.  I don't think that he thought that was ever achievable. LOL!
Again, they have to try to get into the pictures. 



Now we are going to play a game;  can you find the Jeffrey?

He does kind of blend in.  Don't ya think?!  If I took my glasses off or my contacts out, I would lose him for sure.  LOL!

Well I hope that I didn't bore you all to death with my pictures.  I appreciate all of your support and kindness.  It is nice when you can improve on your home.  It makes you feel good.  Nancy just had all new windows put in her sun porch area.  It is awesome.  She and I share our home improvement stories and nightmares together.  If any of you are doing the same thing, I wish you all the best of luck.  And if you are out there waiting for next year to be able to do it...... be as patient as you can, it will get here and it will happen.  It sometimes doesn't happen the way we plan, but it happens the way it was meant to be.  And after you have a chance to sit back and look, you can usually see that it was better off the way it ended up.  Just keep the faith.  I did, it took over 10 years to get this.  I would never have appreciated it then the way that I do now.  I know that for a fact.

TEMPTATION TUESDAY

Hey everyone!  I hope that you all have been doing well.  I can't complain here.  I am not even going to go on about how I will try to do better next week at blogging.  We all know how that goes! Anyway, it is TEMPTATION TUESDAY after all! 

I just wanted to mention a few things to you all before I post the recipe.  First, I just had my new carpet installed, WOO HOO!  I will try to post pictures tomorrow (yeah, right!  I will try to!).  Second, I don't know if any of you have noticed but, Pamela over at Our Pioneer Homestead has posted a free fall pattern for a really awesome cross stitch.  Definitely worth hopping over and getting.   I am currently working on a fall needle punch. It also was free, from Betty at Primitive Betty's blogspot.  Start placing your bets on if it will be done by Halloween.  You know that it won't! LOL!  I am gonna try to though!

Okay, so the recipe for today is one that I had gotten from the Food network from Paula Deen.  It is a delicious recipe too!  Of course!  It's from Paula Deen, c'mon! 

ZUCCHINI BREAD

3/4 c flour
1 1/2 tsp salt
1 tsp nutmeg
2 tsp baking soda
1 tsp cinnamon
3 c sugar
1 c veg. oil
4 eggs, beaten
1/3 c water
2 c grated zucchini
1 tsp lemon juice
1 c chopped walnuts or pecans

In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar.  In a separate bowl, combine oil, eggs, water, zucchini and lemon juice.  Mix wet ingredients into dry, add nuts and fold in.  Bake in 2 standard loaf pans, sprayed with nonstick spray.  Bake on 350 for 1 hour or until a tester comes out clean.  Alternately, bake in 5 mini loaf pans for about 45 mins. 

I have used this recipe more than once.  I especially like to use the mini loaf pans or around the holidays.  Everyone loves this zucchini bread.  I hope that you all give this one a try.  It is a very simple recipe and the rewards are absolutely worth it.

TEMPTATION TUESDAY

Hi everyone!  I hope that you are all still popping on here every now and again.  I am so sorry that I have fallen back into the rut of only posting once a week.  I just haven't been able to get on.  I will continue to try harder.  (promises, promises)!!!!!  I will try. 

Anyway, on the lighter side of things, it is the one day of the week that I somehow manage to try to remain faithful with.  So, just to give you all a future heads up, I do have some more family favorite recipes that will be coming up for the holidays.  I am sorry, but they are coming.  Probably quicker than we are prepared for.  They always are here before I am ready.  I vow that every year I am going to start earlier and be done and ready, LOL, that is way too funny!!!!!  Never gonna happen with a procrastinator!  Oh, you all didn't realize that that is what I am?  Yeah, right!  You all knew it from the first week that I posted.  I did do much better in the beginning though.  I will work on it. 

I also wanted to let you know that I will probably only be posting one recipe a week from here on in.  I am running out of my family faves.  No worries though, I am always on the lookout for new yummies! 

Today's recipe will be one that I have loved since I was little.  I can remember my mom making this every fall when the fresh apples came out.  I remember also, coming home from school and smelling this baking in the oven.  Who wants supper when you know that you have dessert?!  Surely not me!


MOMS APPLE DUMPLINGS

3/4 c sugar
3/4 c water
1/8 tsp cinnamon
1/8 tsp nutmeg
1 1/2 Tbsp butter
2 c flour
2 tsp baking powder
1 tsp salt
2/3 c shortening
1/2 c milk
6 med apples, peeled and sliced

Mix the first four ingredients in a kettle.  Bring to a boil; remove from heat; add butter. 

Sift dry ingredients; cut in shortening until mixture resembles coarse crumbs.  Add milk all at once.  Stir just until flour is moistened. 

On a lightly floured surface roll about 3/4 of the dough out to fit pan.  ( I use a 13x9 it's okay if it doesn't fit perfectly.  It ends up looking pretty rustic anyway and no one will be able to see the bottom).  Put apples in on top of the dough.  Then take the remaining dough and put it in little random patches all over the top.  I flatten out little pieces and try to cover as much area as I can.  (These are very tasty little pieces on top).  Pour the syrup that you made first over the apples and dough.  Bake for 35 mins. at 375.  Serve warm with ice cream or whipped cream.  Even better after it sits in the refrigerator overnight.  (Mine just doesn't seem to last that long.  LOL!)

I hope that you try this one out soon.  The cooler days and the fresh apples.  Nothing smells as good baking as this does.  It is a definite sign of fall to me!  I hope that you all enjoy this one as much as we do too!

TEMPTATION TUESDAY

Good afternoon everyone.  I am sorry that this is a late post.  I am behind schedule........ whoulda thunk it?!  LOL!  I hope that you all had a fun and safe Labor Day Holiday.  Ours was very nice.  Anytime there is a get together, it's always good.  It seems like forever since I last posted.  That's because it has been.  Just got back from picking up some stuff to make some of the Old Fashioned Sour Mustard Pickles from last weeks recipe.  I can't wait to get them started.  My mouth is watering already.  So, for today's recipes, I am going to give you one that I got on the computer yesterday.  I am not sure where it was from (sorry).  I typed in what goes good with meatloaf and I got all kinds of responses.  As I was browsing through I found this one for a:

BUTTERY CORN CASSEROLE

2 eggs, lightly beaten
5 oz evaporated milk
3 tbsp butter, melted, divided
2 cans whole corn, drained
2 c. shredded cheddar cheese
1 c butter cracker crumbs (Ritz, Townhouse,etc)

In a large bowl mix eggs, evap milk and 2 tbsp butter.  Stir in corn, cheese and half of the cracker crumbs.  Pour into lightly greased 11x7 dish.  Sprinkle remaining crumbs over top and pour the remaining butter over that.  Bake at 350 for 25-30 mins. 

The reason I didn't write down where it came from, I wasn't sure if we were even going to like it or not.  Well, let me tell you, we had company over and that was the hit of the meal (until dessert, of course).  Seriously, I have never made a corn casserole before and this was delicious.  It will now be entered in the family favorites section of my cookbook.  Loved it!!!!!

For this next recipe I thought that you all might want something a little sweeter.  HMMM, does that sound good?  Well I think that it does.  So this one here goes out to all of you coconut lovers! 

COCONUT POPPY SEED CAKE

1 pkg white cake mix
1/4 c poppy seeds
1/4 teas coconut extract
3 1/2 c cold milk
2 pkgs (3.4oz ea) instant coconut cream pudding
1 carton (8oz) cool whip, thawed
1/3 c flaked coconut, toasted

Prepare cake according to package directions, adding the poppy seeds and extract to the batter.  Pour into a greased 13x9 pan.  Bake at 350 for 20-25 mins or until done.  Cool completely.  In a mixing bowl, beat milk and pudding mixes on low speed for 2 mins.  Spread over the top of cake.  Spread cool whip over the pudding mix.  Sprinkle with coconut.  YUMMY!

Another quick and easy treat.  Speaking of treat, it's definitely starting to feel fallish..... a step closer to Halloween and then..... well, you all know what comes after that ........ YUP!  It's gettin closer.  Just food for thought.
